Kimchi Turkey Burgers

I was browsing Eating Well magazine the other night when I came across this kimchi turkey burger recipe. My husband requires meat at every meal and I’m not a huge meat-eater so new creative (and easy!) recipes are always welcome. This one was such a breeze and it felt very different from my usual coconut crusted chicken.
I’d love to hear what your go-to burger toppings are when you want to spice things up!
Ingredients:
- 1 lb organic ground turkey
- 3 scallions, sliced
- 8 tablespoons chile paste, divided
- 1 tablespoon toasted sesame oil
- 2 tablespoons mayonnaise
- 4 small whole-wheat hamburger buns
- 12 slices cucumber
- 1 cup kimchi (I used a medium spicy variety)
Directions:- Combine turkey, scallions, 5 teaspoons chile paste and sesame oil in a medium bowl- Gently knead together with your hands.- Form into 4-6 burgers depending on what size you prefer- Grill if you can but if you don’t have a grill, heat 1 tblspn of olive oil in a pan and sautee the burgers for about 5 minutes on each side or until cooked through- Meanwhile, combine mayonnaise and the remaining 3 teaspoons chile paste in a small bowl.- Assemble the burgers on toasted buns with 2 teaspoons of the mayonnaise mixture, 3 slices cucumber and 1/4 cup kimchi each.
