Green Pineapple and Coconut Smoothie Recipe
The weather is finally starting to warm up here on the East Coast, which means one thing—spring is almost here!
One of my favorite ways to celebrate the end of a long winter is to start experimenting with the new, fresh produce that come into season this time of year. I especially love trying out different ingredients to spice up my morning smoothie recipes. There are so many possible combinations out there that I can enjoy a variety of delicious and refreshing smoothies all spring and summer long!
My latest concoction is this green pineapple and coconut smoothie. I absolutely love adding tropical fruit to my green smoothies. While pineapple is available all year long, its peak season is from March through July, so using it now means maximum flavor. Plus, pineapple is loaded with vitamin C, aids in digestion, and is bursting with refreshing, tropical taste.
Try this tropical green smoothie for a delicious and energizing start to your day:
- 1 bunch spinach or kale, roughly chopped
- 1 cup coconut water
- 2 tbsp unsweetened coconut milk
- 1 whole banana, fresh or frozen
- 3/4 cup pineapple chunks, fresh or frozen
- 1 cup ice
Put all ingredients in a blender, blend until smooth, and enjoy!
